I have been pursuing the Art of the Pancake for many, many years. It's my favorite breakfast food, yet I've been unable to make really good ones at home, like I've had in restaurants. You know, nice and fluffy, not too dense, perfectly browned? Even with "just add water" pancake mix I haven't had the best luck, though they've turned out better since I stopped using Bisquick.
Then I came across this awesome article on RealSimple's website.
So I tried out the tips yesterday with my favorite Krusteaz pancake mix (what an awful name, by the way, but I promise it's really yummy). I let the griddle heat up, flicked some water on it to make sure it was hot enough, greased it with a paper towel with a bit of oil, and made a batch of 4 inch pancakes.
And they were *AMAZING*. Perfect. Exactly what I had aspired to. Pancake nirvana. Even better, I topped them with a bananas foster syrup I made from scratch thanks to the Bon Appetit cookbook (butter, brown sugar, water and sliced bananas). I had them for breakfast yesterday and lunch today. YUMYUM.
Yes, I know, I could easily make them from scratch. But we don't consistently have eggs in our fridge so it's easier just to keep pancake mix around. I'll have to try this again with fresh strawberries next weekend. Woot.

I'm so happy that I can't stop crying
Is it bad that I want to start every blog post with "Sorry I haven't written in a while?". Ok, no more guilt. I've been Facebooking, napping, making stuff out of metal, and did I mention napping? Oh, and I'm also growing a person.
Meet BabyX:
I'm still getting used to the idea of being pregnant and it's definitely not all sunshine and puppies like they tell you. But so far, it's not so bad. I say that now at 13 weeks, when I still mostly fit into my own clothes. Ask me again in a few months.
I'm definitely one of those people who has a soundtrack for different parts of my life - usually whatever I'm listening to at the time. I'm happy to say that Star Anna and the Laughing Dogs have released their new album, The Only Thing That Matters. Go download it now - it's REALLY awesome.
I was lucky to get a pre-release rough copy about a month ago, so I've been listening to it non-stop and I LOVE IT. And BabyX will have heard them live quite a few times by the time he/she is born, too :)
So anyway, that's what's been going on here. Oh, and I already got my first piece of unsolicited advice last week at lunch for eating sushi (cooked, but yes, it had some fish eggs as decoration. And I'm willing to accept the risk.). I need to practice my stink-eye and sarcastic retorts for the future situations I'm sure will come up. Any ideas?
